If you have a love of cookies, pretty much any kind, I feel pretty confident you are going to love these cookie bars. These delicious treats are one of my favorite Easter desserts. They are absolutely delicious, super easy to make, and pretty stinking addictive.
Y’all know by now how much I love simple, semi-homemade recipes and these mini egg cookie bars are no exception. Four ingredients, a mixing bowl, and a sheet pan are all you need to bake up these ooey-gooey bars that everyone will love.
How to Make Caramel Chocolate Chip Mini Egg Cookie Bars
An easy Easter dessert, these Caramel Chocolate Chip Mini Egg Cookie Bars are colorful, extremely delicious, and take only 15 to minutes to prep!

- Refrigerated Sugar Cookie Dough
- Caramel Eggs
- Chocolate Chips
- Mini Eggs
Instructions:

Preheat your oven to 350 degrees. Grease a baking sheet with non-stick cooking spray or line with parchment paper.

Open the cookie dough roll and place in a large bowl. Mix in the unwrapped caramel eggs and chocolate chips. Mix well, probably will be easiest to gently kneed with your hands until all mixed.

Gently press the dough mixture into the bottom of your prepared baking dish. Bake for 15-18 minutes or until the bars are golden brown.

Remove the baking sheet from the oven and let for about 2-3 minutes before gently pressing the mini eggs into the tops of the dough.

Let cool completely before slicing into bars.
These Cadbury Mini Egg Bars Aren’t Just for Easter!
I obviously made these Mini Egg Cookie Bars for our Easter celebrations, but this base recipe is perfect to have on hand for a quick, easy dessert year-round! Simply substitute the Cadbury Mini Eggs for other candy. Here are a few of my favorite substitutions:
- Christmas – sub in candy cane Hershey kisses or Christmas m&m’s
- Halloween – throw in a whole bunch of those leftover candy bars, any kind would be delicious!
- Valentine’s Day – add in some Valentine’s M&Ms or top with conversation hearts
- Any Time of the Year – switch up for Rolo’s, chopped up Oreo’s, or peanut butter cups
How Long Do They Last and How Do I Store Them?
While it’s doubtful they will actually last this long, these cookie bars should be good for around 4-5 days. Be sure to store them in an airtight container or large Ziploc bag just right out on the counter. Storing them in the fridge will harden the candy back up. I would highly recommend warming up your leftover bars in the microwave and topping them with some ice cream.
