Y’all know that I love some easy recipes. For me, the easier the better. Which is just one of the many reasons I adore cake mix cookies! No measuring, no sifting –  just dump, mix, and bake. If you want to get extra fancy, like I did with these Vanilla Pumpkin Cake Mix Cookies, add on some frosting and you’ve got a delicious dessert!

Ready to bake? Preheat your oven and get ready for some cookies are the beyond easy to make and even easier to eat!

Ingredients Needed:

  • Vanilla Cake Mix
  • Eggs
  • Oil
  • Flour
  • Can Frosting
  • Orange Food Coloring
  • Pumpkin Pie Spice

How To Make Vanilla Pumpkin Cake Mix Cookies:

No need to whip out the stand mixer for these cookies. Just dump in a bowl and get mixing!

  1. Preheat the oven. Line a baking sheet with parchment paper.
  2. Mix all of the cookie ingredients in a bowl. The dough will be pretty thick.
  3. Roll the dough into balls and place on the baking sheet.
  4. Bake! You want the cookies to puff up some. You don’t want them to brown, they should start to have cracks on the top.
  5. Leave the cookies on the baking pan for a few minutes then transfer to a rack to cool completely.
  6. Get fancy and frost!

Why Cake Mix?

Using a cake mix to make cookies is the perfect short cut to baking up simple treats! A cake mix is just the right blend of flour and flavor!

To Chill Or Not To Chill

While it’s not required to chill the dough before baking, sticking the dough in the fridge after it’s mixed for 15 minutes or so makes for easier handling. Chilling it before rolling the dough out into balls helps protect the dough from the heat from your hands. So choosing to chill the dough is totally up to you and your patience level.

Homemade Frosting

If you would prefer not to use a canned frosting, you can very easily make a homemade version. Simply mix about 4 tablespoons of powdered sugar with a tablespoon of milk and you’re good to go.

Vanilla Pumpkin Cake Mix Cookies

Ingredients

For the Cookies:

  • 1 box vanilla cake mix
  • 2 eggs
  • 1/3 cup vegetable oil
  • 4 tablespoons flour

For the Frosting:

  • 1 container vanilla frosting
  • 1/4 tsp pumpkin pie spice
  • orange food coloring

Instructions

For the Cookies:

  • Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
  • In a large bowl, mix together the cake mix, eggs, oil and flour.
  • Roll the dough into 1.5 inch balls and place on the baking sheet a few inches apart.
  • Bake for about 8 minutes or until the cookies are done.
  • Let cool for a few minutes on the baking sheet and then remove to cool completely on a wire rack.

For the Frosting:

  • In a small bowl, mix together the container of frosting, pumpkin pie spice, and orange food coloring. Add as few or as many drops of food coloring to reach your desired shade of orange.
  • Frost cooled cookies.
  • Enjoy!
