Slow-Cooked BBQ Beer Pulled Pork

Last week I did my first ever guest post over at The NY Melrose Family so I thought I would share the post & recipe here with y’all just in case anyone missed it!!

Hey y’all! I am so honored to be guest posting here at The NY Melrose Family while Jenny & her family are on vacation!  Jenny – I hope y’all are having a blast {& we all expect souvenirs} ;)!

I guess the first thing I need to do is tell y’all who the heck I am!  My name is Jaime and I’m the wife & mom behind Mom’s Test Kitchen, my little space in the blogosphere where I share the recipes that I make for my family.  The Hubs & I recently celebrated our 3 year wedding anniversary but it feels like it should be our 23rd considering we’ve known each other since elementary school.  It makes the dating portion so much easier when you’ve known someone since you were 8!  We have the most beautiful, precious, perfect {I’m not at all biased} little girl, PJ, who just turned 2 at the beginning of the summer.  She was God’s wonderful surprise gift for us 4 months after we got married!  We also have 1 fur baby that rounds out our little family 🙂

And if you can’t tell by the “y’alls”, I am from the South ~ born in South Carolina and currently living in Texas.  And there are a few things here in the South that we take pretty serious, especially here in the Lone Star State:

God, Football, BBQ & Beer ~ and not always in that order

So I, just striving to be a good Southern woman, decided to combine two of our beloved items and made this delicious BBQ Beer Pulled Pork.

INGREDIENTS:
2 pounds pork shoulder butt country style ribs
1 large sweet onion
1 bottle (18 ounces) BBQ sauce
1 bottle (12 ounces) beer of choice ~ I used Miller Lite

LETS COOK:
Peel your onion & then cut into quarters.  Lay the onion quarters in the bottom of your crock pot.  Place the pork ribs on top of the onion.  Pour the bottle of BBQ sauce & bottle of beer on top of the ribs.  Put the lid on the crock pot and turn it on to low and just let it cook all day.

When you’re ready to serve, just pull the meat and onions from the crock pot ~ the meat had plenty of flavor to not need any sauce but you can always add some if you’d like.

NOTES:
*I served this on a toasted hamburger bun with a little mayo and some pickle slices.  And a side of fries.

    I love this. Over the weekend I smoked a Boston Butt for the first time. It was fabulous and I am looking forward to cooking them more. My blog post about it will be out soon.
