You want to know one of the things I dislike most about cooking?  I loathe having to chop vegetables.  It’s so time consuming, messy & and just a pain to sit there and do.  I dislike it so much, I don’t even own an actual cutting board. {GASP!}   If I know I’m going to have to chop things up that week for meals, I buy those cutting sheets at the dollar store & then just toss them after a few uses.

Take this Quick & Easy Chicken & Rice Soup for instance.  In less than 30 minutes, we had a large pot of homemade, wholesome soup.  Way better than the canned version.  It’s packed full of delicious vegetables, all in a perfect bite size form.  And I didn’t have to chop a thing!  The most time consuming part of this recipe was shredding the chicken!

Quick & Easy Chicken & Rice Soup

Ingredients
  

  • 1 bag 12 ounces Birds Eye Recipe Ready mixed vegetables
  • 2 cups rotisserie chicken or leftover, shredded or diced
  • 1 can 14.5 ounces fire roasted tomatoes, drained
  • 1/2 teaspoon dried thyme
  • 1 bag 10 ounces Birds Eye SteamFresh Brown Rice, cooked according to package directions
  • 4 cups chicken broth
  • salt & pepper to season

Instructions
 

  • In a large saucepan, combine all ingredients. Bring to a boil over high heat. Reduce the heat to low & simmer 5-10 minutes or until warmed through.
