I go to the grocery store on a weekly basis.  Every Sunday, like clockwork, I head out to stock up on the best sales at my local store.  I spend who knows how many hours of my weekend searching through the deals, finding meals & recipes that I can make based on whats on sale, then checking to see if I have coupons to go with the sales.  And that isn’t even taking in to consideration the time I’m actually at the store shopping!  I truly have grown to hate menu planning & grocery shopping.  I just want my weekends back!

And you want to know something?  I’ve taken my weekends back with some help from eMeals!  This one website has transformed the way I do my menu planning! And by transformed I mean I don’t have to do it anymore!!  eMeals does all of the hard work for me & all I’m left with is the actual shopping.

See those 3 pretty pieces of paper right there?  That’s my weekly menu plan consisting of 7 dinners plus the detailed grocery list of what all I need to make those 7 meals.  So now, every weekend all I have to do is sit down, make a list of the household essentials we need & then hit the store!  Bonus: eMeals also offers weekly breakfast & lunch menu plans!  Bonus x2: the lunch menu plan is geared towards brown bagging it!  They even give you the best tips on how to package up the meals to take with you to school or work!

So, if you’re like my husband you’re probably questioning if eMeals will actually work for you.  Are they going to have recipes your family likes?  How expensive are the recipes going to be to make, we’re on a budget?  We have food allergies in the family so I know it’s not something I can use.  Well I’ll tell y’all just like I told the Hubs – HA! And you’re wrong!  “Darling, eMeals has 13 available menu plans that fit any lifestyle!  From the Classic Plan to Gluten Free to Paleo, they’ve got it covered!”

Seriously though, eMeals was created by 2 super duper busy moms, and just like all of us, they desperately wanted to find an easy way to plan their weekly menus & once they figured it out, they so very, very kindly decided to share it with the rest of us!  They are my heros.

So, after much debate, and changing the meal plan selection {you can change your plan once per month if you ever want to try out some of the other plans!}, we settled on the Classic Family Menu Plan.  I picked this plan because it allows me to add in my favorite store & it plans the menu around the specific store & their products & their sales.  I love that!  Not only am I getting a great menu for the week, I’m getting one that factors in the weekly sales & will save me some money!

You can head on over to eMeals.com to check out some sample menus for each plan but I thought I would share one of the actual recipes from our plan!  This Poblano Chicken Alfredo was quick & easy to make, didn’t cost me a fortune to buy the ingredients I needed, plus, it ended up being enough for us for a second night! Yippee for the extra bonus of saving even more money with leftovers! 😛

Poblano Chicken Alfredo

Print Recipe Pin Recipe
Prep Time 15 mins
Cook Time 30 mins
Total Time 45 mins

Ingredients
  

  • 6-8 ounces linguine noodles
  • 1 tablespoon olive oil
  • 1 & 1/2 pounds chicken breast tenderloins
  • 3 cloves minced garlic
  • 1/4 teaspoon crushed red pepper flakes more if you like spice
  • 1 can 15.25 ounces fiesta corn (corn & peppers), drained
  • 1 jar 15 ounces alfredo sauce
  • 1 can 4 ounces diced green chilies

Instructions
 

  • Cook the pasta according to package directions.
  • Preheat the oven to 350 degrees.
  • In a large skillet, heat the oil. Add the chicken and cook until browned, about 3 minutes per side. Add the minced garlic to the skillet and sprinkle the chicken with the red pepper flakes. Saute the chicken in the garlic for about 30 seconds - 1 minute, being sure not to let the garlic burn. Remove the chicken from the skillet & cut into bite sized pieces.
  • Add the pasta to a 2 quart casserole dish. Add the chicken & fiesta corn to the dish, tossing to mix. Combine the alfredo sauce & chilies; pour over the chicken and pasta. Toss to combine.
  • Bake for 25 - 30 minutes or until sauce is bubbling.

    Where are the poblanos? Green chili’s are not poblanos and I don’t see them in the ingredient list….??? Just curious ;

      Lol, that’s a good question Shelly! I didn’t even think about that when I was making it & I didn’t name the dish. I might have to update it to Tex-Mex Chicken Alfredo? 🙂
