You want to know one of the things I dislike most about cooking? I loathe having to chop vegetables. It’s so time consuming, messy & and just a pain to sit there and do. I dislike it so much, I don’t even own an actual cutting board. {GASP!} If I know I’m going to have to chop things up that week for meals, I buy those cutting sheets at the dollar store & then just toss them after a few uses.
I am a frozen, pre-chopped veggie girl all the way! Which is why I have fallen madly in love with Birds Eye new line of Recipe Ready products. These things are awesome! And they make it so easy to get a wholesome, flavorful, fresh & yummy meal on the table in less than 30 minutes!
So what exactly is Recipe Ready? It’s Birds Eye new line of delicious pre-cut vegetables that are ready to be thrown into stir-fries, fajitas, tacos, pastas, hamburgers & so much more!
Take this Quick & Easy Chicken & Rice Soup for instance. In less than 30 minutes, we had a large pot of homemade, wholesome soup. Way better than the canned version. It’s packed full of delicious vegetables, all in a perfect bite size form. And I didn’t have to chop a thing! The most time consuming part of this recipe was shredding the chicken!
Quick & Easy Chicken & Rice Soup
Ingredients
- 1 bag 12 ounces Birds Eye Recipe Ready mixed vegetables
- 2 cups rotisserie chicken or leftover, shredded or diced
- 1 can 14.5 ounces fire roasted tomatoes, drained
- 1/2 teaspoon dried thyme
- 1 bag 10 ounces Birds Eye SteamFresh Brown Rice, cooked according to package directions
- 4 cups chicken broth
- salt & pepper to season
Instructions
- In a large saucepan, combine all ingredients. Bring to a boil over high heat. Reduce the heat to low & simmer 5-10 minutes or until warmed through.
