Thai Chicken Flatbread Pizza

 As a stay at home mom, I’m always on the hunt for budget friendly recipes.  One of our favorite low-cost meals is pizza, but not the frozen out of the box kind.  We love flatbread pizza!  And we love Asian food so I knew I had to try out an Asian inspired pizza.  It was absolutely delicious!  This is definitely a pizza we’ll be making again!
*If you’re not a huge fan of spicy, use less hot sauce in the recipe ~ it does have a nice kick to it 🙂
 

Thai Chicken Flatbread Pizza

 

THAI CHICKEN FLATBREAD PIZZA

INGREDIENTS:
  • 1 can (5 ounces) chicken
  • 1 can (8 ounces) crushed pineapple, drained
  • 1 cup frozen 3 pepper & onion blend, thawed
  • 1/2 cup fresh spinach leaves, roughly chopped
  • 2/3 cup creamy peanut butter
  • 1/2 cup hot sauce (I used Frank’s)
  • 1/4 cup teriyaki sauce
  • 1/4 cup cilantro leaves
  • mozzarella cheese
  • flatbread
 
INSTRUCTIONS:
 
Preheat oven to 450 degrees
Place the peanut butter, hot sauce, teriyaki sauce & cilantro in a food processor, blend until smooth.
Spread the sauce onto the flatbread – use as much or as little as you would like
Top the peanut sauce with the chicken, crushed pineapple, onions & peppers, & spinach. Top with mozzarella cheese.
Bake for 3-5 minutes or until the cheese has melted.



NOTES:

*I gave the measurements for the pizza topping ingredients that I started with but I did not use those full amounts on the pizzas – I was only making two pizzas so I had plenty leftover, especially of the sauce
