Happy Monday Friends! It’s time to get Menu Planning!
Are your kids heading back to school anytime soon? Today was supposed to be the first day of 5th grade for PJ, but her school pushed their start date back two weeks. So now we have an extra two weeks of no routine, bedtimes that are too late, and a whole, WHOLE lot of screen time. But we will survive. You and your family will this survive too!
RECIPE OF THE WEEK:
This Pasta Primavera was amazing y’all! It has been one of the Hub’s favorite recipes that I have made recently. He loved it so much that he has already asked to have it again. A second request within the same week makes it a winner in my book!
I did make a few changes from the original recipe. Instead of sautéing my vegetables in a skillet, I threw all those bad boys mixed together in the air fryer and let them roast for a few minutes. I also added a little bit of Oil and Vinegar Dressing to the olive oil and pasta water just to give it some extra liquid and a pinch more flavor. I would definitely recommend adding this one to your menu to try out!
This Week’s Menu Plan:
Monday: Instant Pot Tuscan Chicken, pasta, carrots
Tuesday: Dinner with in-laws
Wednesday: Instant Pot Ribs, Air Fryer corn on the cob, green beans
Thursday: leftover Ribs
Friday: Ham and Cheese Sandwiches, French fries
Saturday: Movie Night – take out or delivery dinner
Sunday: With Family – Nephew’s first birthday
