Welcome to #WaffleWednesdays y’all!!  I have partnered with Kellogg’s to be a Chief Waffle Officer which means I will be sharing Eggo waffle recipes here every Wednesday until the end of October!!  But don’t expect eight weeks of boring, waffle-filled breakfasts!  We’re thinking outside of the box & cooking up your favorite desserts, game day snacks & holiday treats all using waffles!!

Have y’all ever made bread pudding?  I haven’t.  I don’t think I have ever even tasted it.  So all of this of course made for the most logical option of making waffle bread pudding for #WaffleWednesdays!!  Hey, no one can say I’m not adventurous! 😉

I started searching through bread pudding recipes & they all seemed to call for heavy cream, which I of course had none of.  But you know what, I did have ice cream!  Those can be exchanged right??  Adventurous, remember?

So I threw some ice cream in my waffle bread pudding & we had dessert!!  And it was good!!  I was pretty stinking proud of myself 🙂

CHOCOLATE CHIP COOKIE DOUGH WAFFLE BREAD PUDDING 

YIELD: serves 8-10

INGREDIENTS:

COOKING INSTRUCTIONS:

  1. Preheat the oven to 350 degrees. Thaw the waffles until you are able to cut them into bite-sized pieces. Place the waffle pieces on a large baking sheet. Bake for 15 minutes, stirring every 5 minutes, until crisp.
  2. Meanwhile, in a large bowl combine the eggs, milk, ice cream, & vanilla. Mix well until combined. Add the crisped waffle pieces and chocolate chips. Stir mixture together until waffle pieces are coated with the egg mixture. Let sit for 30 minutes, stirring every 10 minutes. Preheat your oven to 375 degrees during the last 10 minutes.
  3. Pour the mixture into a buttered 8×8 baking dish. Cover with foil and bake for 30 minutes. Remove the foil and bake an additional 20 minutes. Remove from the oven and serve warm, topped with another scoop of ice cream!
