Cinnamon Coated Almonds {Disney Style}

As Jaime’s resident Disney contributor, I decided that each month in 2014, I’m going to share a Disney Parks inspired food!  Our family has visited Walt Disney World so many times, and in turn we’ve enjoyed much of the best food on Disney property!  One of my husband’s FAVORITE treats is found throughout the Disney parks, but he always manages to snag these Cinnamon Coated Almonds while we are shopping at Downtown Disney.

The kids are enjoying their Mickey Ice Cream Bars, I’m loving my Ghiradelli chocolate treats, and he stops to get some Cinnamon Coated Almonds.  The best part, is they are served warm!  And that is his FAVORITE way to eat them!  So, I recreated them at home, and now I’m sharing them with you today.  It was SO easy, and they turned out really well.  Be aware, they are addicting!

Cinnamon Coated Almonds {Disney Style}

Ingredients:

1/3 cup butter

2 egg whites

2 teaspoons of salt

1 cup sugar

4 teaspoons cinnamon

16 oz whole almonds

Directions:

1.  Heat your oven to 325.  Line a cookie sheet with foil and set aside.

2.  Melt the butter in the microwave, and set aside.  In your stand mixer, with the whisk attachment, beat the egg whites and salt until it’s frothy.  Slowly add the sugar.  Beat on a high speed until stiff peaks begin to form.

3.  Add the cinnamon, and mix until blended.  Slow the speed to medium/low and add the almonds and melted butter.

4.  Pour the mixture onto the foil lined cookie sheet and spread into a single layer.  Bake for 10 minutes at a time, stirring after each 10 minutes.  Continue until it has baked for about 40 minutes.

5.   Serve the almonds warm or at room temperature.
