Hot Cocoa Cookies
Even though we’ve had record heat the past few days ~ seriously, it was 83 over the weekend ~ I’ve been trying to convince myself that it’s really cold outside so I can try to believe it’s almost Christmas.  I haven’t set up the Christmas tree or any decorations yet.  I feel so far behind but it’s so difficult to get in the Christmas spirit when you’re wearing shorts & flip flops.

I decided since it’s too hot to drink hot chocolate I would try out these little beauties!  I’ll gladly take the cookies any day!
HOT COCOA COOKIES
INSPIRED BY: Dinners, Dishes and Desserts
YIELD: 5-6 dozen cookies

INGREDIENTS:
- 1/2 cup butter, softened
 - 1/2 cup butter flavored shortening
 - 3/4 cup sugar
 - 3/4 cup brown sugar
 - 2 eggs
 - 1 teaspoon vanilla
 - 2 & 1/4 cups all-purpose flour
 - 1 teaspoon baking soda
 - 4 packets (.71 ounces) hot chocolate mix
 - 1/2 cup semi-sweet chocolate chips
 - 2/3 cup mini marshmallows
 
LETS COOK:
Preheat oven to 350 degrees.  Spray a baking sheet with cooking spray or cover with non-stick foil.
In a large bowl, cream together the butter, shortening, sugar and brown sugar.  Add in the eggs & vanilla and mix until well combined.  Stir in flour, baking soda, & hot chocolate mix.  Fold in the chocolate chips and mini marshmallows.
Scoop 1/2 tablespoon size balls of the dough onto the baking sheet.  Bake for about 10 minutes.  Allow to cool on the baking sheet for few minute before removing to a wire rack to cool completely.
