Spinach Hummus | Mom's Test Kitchen | #AppetizerWeek

I’m a huge hummus fan! I could eat it probably every day! I love eating it as a dip with pita chips but I also love it on my wraps & sandwiches.

This Green Hummus (or spinach hummus) is packed full of fresh spinach to give it an amazing flavor. I will say though, if you aren’t a fan of spinach, you probably won’t enjoy this. The spinach flavor isn’t consuming but it is strong but it’s delicious! Nice & creamy, spinach hummus is the perfect healthy appetizer option!

Spinach-Hummus | Mom's Test Kitchen

Green Hummus {aka spinach hummus}

Ingredients
  

  • 3-4 tablespoons olive oil divided
  • 2 cloves minced garlic
  • 5 ounces fresh baby spinach
  • 1 can 15 ounces chickpeas, drained & rinsed, reserving 2 tablespoons of liquid from the can

Instructions
 

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the garlic and saute for about 1 minute or until fragrant. Add the spinach & cook about 2 minutes or until wilted. Remove from the heat.
  • Add the chickpeas along with the reserved liquid to the skillet. Toss lightly just to combine.
  • Add the contents of the skillet to a food processor. Cover & process until smooth, adding olive oil as needed to reach desired consistency.
