This is recipe number 2 that I’ve tried in the past two weeks in an attempt to make Homemade Fiddle Faddle.  Recipe #1 was such a bust I was too ashamed to even share it with y’all!  It was one of the worst fails I’ve had in the kitchen in a long time!

Homemade Fiddle Faddle

Attempt #2 turned out a little better.  Good enough that I photographed it & I’m blogging it at least 😉  The flavor in this one was really good!  The fail about this recipe though is the caramel never really set & the popcorn stayed very very sticky.  Not too sticky that it couldn’t be eaten though {as long as you had plenty of wet wipes around}!!

HOMEMADE FIDDLE FADDLE
YIELD: 4 servings
INSPIRED BY: Recipe Snobs

INGREDIENTS:
  • 1/2 cup sugar
  • 1/3 cup light corn syrup
  • 1/2 cup butter (1 stick)
  • 1 teaspoon vanilla extract
  • 2 bags microwave popcorn, popped & unpopped kernels removed
  • 1/2 cup salted peanuts
 
INSTRUCTIONS:
 
In a medium saucepan, combine the sugar, corn syrup, and butter. Bring to a boil, & boil for 3 minutes. Remove from heat and add the vanilla extract.
 
Mix the popped popcorn & peanuts in a large bowl. Slowly pour the caramel mixture over the popcorn and nuts. Quickly stir the hot mixture into the popcorn until evenly covered. Cool and serve.

    Also use a candy thermometer. Most recipes for any type of caramel coating call for boiling until it hits the hard ball stage. It may not have reached that stage.

    To alleviate the stickiness you should bake the popcorn in a slow oven at 250 degrees for one hour, turning every 20 mins…it will bake the caramel into the popcorn! Will not effect taste! Good Luck!

    What causes it not to set up and stay sticky? I made a batch last night and is very goood but very sticky… bummed! Please help.

      Honestly Emily, I have no clue because it did the same thing to me!! The flavor was awesome but it never set like actual Fiddle Faddle 🙁

        You need to put the finished caramel corn in a big glass bowl, microwave on high for a minute, stir, then microwave on high for another minute. The is like the grocery bag caramel corn recipe. In it, you would pour mixture over half a large bag of popcorn, stir, cook, shake, then cook again.

      It needs to be heated longer. To probably at least soft crack or possibly hard crack temps.
