Creme De Menthe Chocolate Pudding Cookies
This was my first year participating in The Great Food Blogger Cookie Swap. It was so much fun!!! I absolutely loved getting 3 different packages full of cookies over the last couple of weeks! And it was so much fun getting to send out my own creations to other food bloggers to try out! Normally the Hubs eats everything & he always says everything tastes good. So either I truly am a damn good cook or to a hungry man that’s been working outside for probably 75% of his day, just about anything tastes good that’s not from fast food or a gas station!
These cookies really are awesome though. Thanks to Doree for pointing it out, these Creme de Menthe Chocolate Pudding Cookies taste very similar to a Thin Mint. Which rocks. I’m thinking these cookies are going to be making their rounds as gifts this year. {Sis, if you’re reading this, ignore that last line. I said nothing about making you cookies} 😉
Creme De Menthe Chocolate Pudding Cookies
Ingredients
- 1 cup butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/4 cup cocoa powder
- 2 & 1/4 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 box 3.9 ounces instant chocolate pudding mix
- 1 bag 10 ounces Creme de Menthe baking chips
Instructions
- In a medium bowl, cream the butter, sugar and brown sugar with an electric mixer until thoroughly combined. Add the eggs and vanilla. Mix well.
- In a separate medium bowl, combine the cocoa powder, flour, baking soda, salt and instant pudding. Slowly add the dry ingredients into the butter mixture, mixing well. Fold in the baking chips. Chill the dough for about 30 minutes.
- Preheat the oven to 350 degrees. Grease your baking sheets with non-stick spray or line with parchment paper. Roll the dough into 1/2 tablespoon size balls. Bake for 8 minutes. Allow to cool for 2 minutes on the baking sheet before removing to cooling rack to cool completely. Store in a covered container.
