Almond Truffles
So y’all, I got a wild hair & thought I would try to make some truffles, which I had never made before. After this experience, I don’t think I’ll ever make them again!
Don’t get me wrong, it had nothing to do with the taste, they were definitely liked, but coating them in chocolate was wayyyyyyyyy toooooo time consuming and messy! I’m too lazy for all of that!!
INGREDIENTS:
1 package (8 ounces) cream cheese, softened
2 cups powdered sugar, sifted
1 & 1/2 teaspoons almond extract
2 cups milk chocolate chips, melted
LETS COOK:
1. In a large bowl, beat the cream cheese until smooth.
2. Gradually add in the powdered sugar making sure it’s well blended.
3. Slowly stir in the melted chocolate and almond extract.
4. Refrigerate until set.
5. Shape into balls.
I then melted semi-sweet chocolate chips in a double boiler and coated the truffles. You have to work very fast with this because the truffles start to soften very quickly. I worked in batches of 12 and didn’t make it past the first batch. I wasn’t kidding about being lazy 🙂
Oh I love how easy those are to make! Those would make a great Christmas gift for friends! Yum!
