Candied Bacon Chocolate Chip Cookies

Hey it’s Doree, back again from Top Notch Mom. I love when I get to hang out with all of you lovely MTK followers! I had no trouble coming up with a recipe to share with all of you. I’ve been wanting to change up a simple chocolate chip cookie and when we had some left over bacon I knew what needed to happen next. Have you ever candied bacon before? Holy moly I could’ve ate every last strip of it myself but let’s keep that between you and I. I added the candied bacon to my chocolate cookie dough and low and behold this is what I got:

Candied Bacon Chocolate Chip Cookies
Ingredients
- Candied Bacon:
- 10 slices center cut bacon
- 1/2 C brown sugar
- Cookies:
- 2 + 1/4 C flour
- 1/2 TSP baking soda
- 3/4 C butter - melted
- 1/2 C white sugar
- 1/2 C brown sugar
- 1 TBS vanilla extract
- 1 egg + 1 egg yolk
- 1 C semi-sweet chocolate chips
Instructions
- Candied Bacon:
- Preheat oven to 350 degrees
- Place bacon in a single layer on a foiled lined sheet
- Sprinkle brown sugar on top of bacon strips
- Bake for 10 minutes and then turn strips over and continue to bake for another 8-10 minutes
- Cool on a wire rack and then chop finely
- Reduce oven to 325 degrees
- In a bowl mix flour and baking soda
- In a medium bowl cream together butter and sugars
- Add vanilla, egg + egg yolk to the bowl and beat until creamy
- Add flour mixture and mix well
- Add candied bacon and chocolate chips until combined
- Bake on a parchment lined baking sheet for 12 minutes
- Let cool 5 minutes before placing on wire rack

Really? I have such a hard time wrapping my mind around this. I mean don’t get me wrong. I love chocolate and I love bacon and I have even had chocolate covered bacon before….. new things can be scarey though right. New things can also be delicious. I might need to give this a try soon.

I wasn’t sure the first time I had bacon in a cookie either, but it works!! You should definitely give them a try!!
