Kicked-Up BLT Sandwich #BaconMonth

Did you think I had forgotten about #BaconMonth already???  I’m so excited to share this first recipe with you!  BLT sandwiches are probably my favorite sandwich of all time.  If a BLT is on a menu, there’s no question, that’s what I’m ordering.

Kicked-Up BLT Sandwich

This BLT is kicked up with the extra addition of avocado & a sun-dried tomato pesto mayo that is delicious & makes this sandwich one of the top dogs of BLT’s! 

Kicked-Up BLT Sandwich


KICKED-UP BLT SANDWICH 
YIELD: serves 2

INGREDIENTS:

  • 4 slices sandwich bread
  • 2 tablespoons mayo
  • 1 tablespoon prepared sun-dried tomato pesto
  • 8 slices bacon, cooked & cut in half
  • 1 whole avocado, peeled & sliced
  • tomato slices
  • lettuce

COOKING DIRECTIONS:

  1. {optional} Toast your bread in a skillet with a small amount of butter until light golden brown. Set aside.
  2. Mix together the mayo & the prepared sun-dried tomato pesto in a small bowl. Refrigerate until ready to prepare sandwiches.
  3. To Make One Sandwich: Spread the two pieces of bread with 1/2 of the sun-dried tomato mayo mixture. On one piece of bread, lay the bacon on top of the mayo, then top with the lettuce & tomato slices. Lay the slices of 1/2 the avocado on top of the tomato. Top with the second slice of bread, mayo side down.
  4. Use a sharp knife to cut the sandwich in half (on the diagonal).
