Garlic Chicken Tacos with Corn Salsa #WeekdaySupper #SauteExpress

Do y’all remember a couple of weeks ago when I made this delicious quick & easy dinner using these amazing new Sauté Express® Sauté Starters from Land O Lakes®?

 
 
Well I’ve been at it again!!  And this time I brought out the garlic!  Because, truly, is there anything better than garlic?
 

 
 
Holy Yum, was it good!!  And still so beyond easy!!  The corn salsa can be made in advance making the dish even more simple to throw together come supper time!  All I had to do was simply cook the chicken once the Hubs got home from work & we were sitting down eating in well under 30 minutes!!  You seriously can’t beat that!
 

 

 
GARLIC CHICKEN TACOS WITH CORN SALSA
YIELD: 4-5 Tacos

INGREDIENTS:
    For the Chicken
    • 2 Land O Lakes® Garlic & Herb Sauté Express® squares
    • 1/2 pound chicken breast tenderloins


    For the Corn Salsa

    • 1 bag (12 ounces) frozen sweet corn, defrosted & drained
    • 1 jalapeno, seeded & chopped
    • 1/2 of a red onion, diced
    • 1 bunch fresh cilantro, roughly chopped
    • juice from 2 small limes
    flour or corn tortillas
     
    INSTRUCTIONS:
     

    For the Chicken

    Melt the Sauté Express® squares in a nonstick skillet over medium-low heat just until bubbles begin to form.
    Add the chicken.
    Sauté 13-18 minutes or until the chicken is golden brown on both sides and done (165°F). Remove from skillet. Cut into thin strips.


    For the Corn Salsa

    Combine all ingredients in a bowl & mix well. Add more or less jalapeno, cilantro or lime depending on your tastes. Cover & refrigerate until ready to serve.
     
    Top each tortilla with the chicken & corn salsa.
