Pepperoni Pizza Muffins {@cooking_curls Guest Post}
Happy Friday y’all! This weekend’s gonna suck. This week has kinda sucked. We’re moving. Right now as you’re reading this I am probably dealing with a husband who has been at work for about 10 hours, then decided to come home & go ahead and start moving some things tonight even though we’ve rented a Uhaul for tomorrow. Makes perfect sense right?? I’m also probably trying to keep a ‘helpful’ 3 year old away from her always cheerful & never tired or stressed daddy 😉 Prayers dear ones, prayers are needed!!
To give me one less thing to think about this weekend, a couple of my dear Bloggy friends have taken over the Kitchen today & Monday! First up is Lisa from Cooking with Curls! I know y’all are gonna love her & her delicious kid friendly recipe!!

Hi, I’m Lisa from Cooking with Curls and I am so excited to be here! I would like to give a HUGE thank you to Jaime for inviting me to take over her blog for the day 🙂 So just who am I? I am a stay at home mom with two amazing kids. We are originally from California, and moved to Iowa 14 years ago. Culture shock does not even begin to describe how I felt! I needed to find ways to occupy my time and as a result, I have finally found my passion….. a love of cooking! I started my blog last November and I have loved every minute of it. When you come visit me, you will find recipes that include family favorites like Bacon Cheeseburger Pizza, restaurant re-creations like Combination Yakisoba, and a lot of cakes baked with alcohol like Watermelon Margarita Cocktail Cakes. All of my recipes are made from scratch, with lactose-free / dairy-free options, and have easy to follow instructions with step-by-step photos!
Okay, enough about me…..let’s talk Pepperoni Pizza Muffins! When I first found out that I would be sharing a recipe with Jaime’s lovely followers, I started thinking up recipes. I tried to remember back to the days of feeding a toddler and pizza was a natural choice, but not just any pizza. This is pizza that you can easily hold in your hand! How about some pictures to seal the deal…..

PEPPERONI PIZZA MUFFINS
INGREDIENTS:
14 ounce packaged pizza dough*
1 can pizza sauce, I love Dei Fratelli
8 ounces grated mozzarella cheese
1 package of pepperoni slices, use as many as you like
grated Parmesan cheese
DIRECTIONS:
Preheat oven to 375 degrees. Spray muffin tin (12 cavities) with cooking spray, set aside Roll out pizza dough on a floured work surface Spread pizza sauce on top of the dough. I used about 1/3 cup Sprinkle with grated mozzarella cheese, however much you would like Place pepperoni in rows covering the cheese Roll the narrow side up about half way, and cut to separate from remaining dough Slice into 6 equal pieces (just like cinnamon rolls) Place each spiral into the cavity of a muffin tin Roll and slice the remaining pizza and place into the pan Bake for 12 – 15 minutes, or until cheese is bubbling Allow to cool slightly before serving Serve with additional pizza sauce for dipping
*If you are using homemade dough, let your pizza spirals rise until doubled before baking
