Apple Pie Cookies
I have had so much fun making cookies these past two weeks for the 12 Days of Christmas Cookies Party! Have you been by to check out the link up lately?? There are almost 100 amazing cookie recipes all in one place! Now just because today is the last day of the party, don’t be discouraged because I still have one more great cookie recipe to share tomorrow for the Christmas Cookie Swap!!
These cookies were A-mazing! They truly did taste like an apple pie in a bite size portion. The only thing I wish had been different was for the crust to have gotten just a bit crisper. But they were still good!
APPLE PIE COOKIES

Yield: 2 dozen cookies

INGREDIENTS:
- 1 box (2 crusts) refrigerated pie crusts
- 3/4 cup packed brown sugar
- 3/4 cup flour
- 3/4 cup instant oatmeal (2 packets) ~ I used Brown Sugar & Maple Oatmeal
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon baking powder
- pinch salt
- 1/2 cup butter, cut into chunks
- 1 can (21 ounces) Lucky Leaf Premium Apple Pie filling, roughly chopped
LETS COOK:
Preheat oven to 375 degrees. Line a cookie sheet with parchment paper or nonstick foil.
In a large bowl, mix together the brown sugar, flour, oatmeal, cinnamon, nutmeg, baking powder & salt. Add in the butter chunks & cut in until it starts to form a crumble. Reserve a 1/2 cup.
Stir the apples into the remaining crumble mixture.
Unroll the pie crust & using a round cookie or biscuit cutter, cut 12 circles out of each pie crust. You could roll the dough & make more cookies if you want but I was good with the 2 dozen 🙂
Place the pie rounds on the baking sheet. Place a large spoonful of the apple pie mix on top of the pie round. Sprinkle a small amount of the reserved crumble on top.
Bake 15-18 minutes or until the crusts are lightly golden brown. Let cool on the baking sheet for a few minutes & then remove to wire rack to cool completely.
Why not make them triangular. No waste and cute!
