TRI-PEPPER QUESADILLAS WITH CREAMY CHIPOTLE SAUCE 
YIELD: Serves 2-3

INGREDIENTS FOR CREAMY CHIPOTLE SAUCE:

  • 1/2 cup sour cream
  • 1-2 tablespoons chipotle sauce
  • juice from 1 small lime {about 1-2 tablespoons)

INGREDIENTS FOR QUESADILLAS:

  • 3 bell peppers ~ I used one red, yellow & green
  • 1 small onion
  • 6 flour tortillas
  • shredded cheese

COOKING INSTRUCTIONS:

  1. In a small bowl, mix together the sour cream, chipotle sauce & lime juice. Set aside.
  2. In a small skillet on medium heat, saute the peppers and onions until crisp-tender.
  3. Place a tortilla on a greased griddle. Top with a handful of shredded cheese & 1/3 of the peppers and onions. Add a small amount of additional cheese & top with another tortilla. Cook over medium heat 1-2 minutes, flip and continue to cook until each side is lightly browned and the cheese has melted.
  4. Serve with the Creamy Chipotle Sauce for dipping.
