Balsamic Chicken & Pepper Sandwiches #PepperParty

So for my last #PepperParty recipe, I made a super simple sandwich. These sandwiches can even be made with leftover chicken if you want to make it that much simpler! All you need is your chicken, some chopped up peppers and onion and a bottle of balsamic vinaigrette dressing and you’re set to go for these Balsamic Chicken & Pepper Sandwiches.
BALSAMIC CHICKEN & PEPPER SANDWICH
INGREDIENTS:
- 1 & 1/2 pounds chicken, cooked & shredded {I used tenderloins}
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 1 small onion, chopped
- 1/2 cup balsamic vinaigrette dressing plus more for sandwiches
- hamburger buns
COOKING INSTRUCTIONS:
- In a large skillet over medium heat, saute the peppers and onion until tender. Add the chicken & dressing to the skillet and toss to mix. Continue to cook, stirring often, until chicken is heated through.
- Toast your hamburger buns if desired and serve with the chicken & peppers. Add additional vinaigrette to the sandwiches if desired.
