Balsamic Bruschetta Chicken

I would love to be able to tell y’all how good this dinner was.  How nicely the bruschetta topping complimented the chicken.  Sadly though, I can not.  I got the ‘joy’ of cooking the dinner but didn’t get to benefit from my hard work.
The Hubs is the oldest of three.  His brother, the baby, is 9 years younger.  My brother-in-law likes to decide at 5:00 pm that he’s coming to our house for the night.  Or at least that’s when the Hubs decides to tell me.  So this just happened to be one of those nights.  By the time both the guys & Princess P were fed, all that was left was some pasta & a little bit of the bruschetta topping. 
That was at least good 🙂

 




BALSAMIC BRUSCHETTA CHICKEN

INGREDIENTS FOR CHICKEN:
  • 2 large chicken breasts
  • 1/4 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
 
INGREDIENTS FOR BRUSCHETTA:
  • 6 Roma tomatoes, seeded & diced
  • 1 sweet onion, diced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried parsley
  • mozzarella cheese, finely shredded


LETS COOK:

  1. Combine the ingredients for the marinade in a large Ziploc bag.
  2. Add the chicken to the bag & marinate for a few hours up to overnight ~ I did mine overnight.
  3. In a small bowl, combine the bruschetta ingredients. Set aside while you cook the chicken.
  4. Saute the chicken in a skillet over medium high heat until cooked through ~ no longer pink on the inside & the juices run clear. My chicken was very thick so I ended up having to slice the chicken while I was cooking it to prevent the outside from burning.
  5. Once the chicken has cooked, transfer it to a baking sheet covered in foil.
  6. Top each chicken breast with the bruschetta topping ~ I love bruschetta so I tried to pile as much as I could on top.
  7. Cover the chicken & bruschetta with mozzarella cheese.
  8. Broil for about 3-5 minutes or until the cheese is melted.
NOTES:   
*I served this on top of pasta

  2. This looks so good! I had the Bruschetta Chicken at O’Charley’s last night, which I love…. I will definitely have to try this recipe at home!
