I bet Japanese style eggplant would be great on the sandwich! I almost thought I was going to have to change my plans when I went shopping ~ all of the eggplants looked horrible! I finally found some nice organic ones that worked perfectly!

I had honestly never had a muffuletta before ~ I’m not a huge fan of the meats on a traditional one! I’m a fan of the eggplant version now though!!
