Caramel Chocolate Chip Mini Egg Cookie Bars
Fun and festive, these Easter Mini Egg Cookie Bars are about to become your new favorite Spring dessert! These easy sugar cookie bars packed with chocolate chips, caramel eggs, and mini eggs are perfect for your Easter family gathering.
- 1 roll refrigerated sugar cookie dough
- 12 caramel eggs
- 1 cup chocolate chips
- 1/2 cup mini eggs
Preheat your oven to 350 degrees. Grease a baking sheet with non-stick cooking spray or line with parchment paper.
Open the cookie dough roll and place in a large bowl. Mix in the unwrapped caramel eggs and chocolate chips. Mix well, probably will be easiest to gently kneed with your hands until all mixed.
Gently press the dough mixture into the bottom of your prepared baking dish. Bake for 15-18 minutes or until the bars are golden brown.
Remove the baking sheet from the oven and let for about 2-3 minutes before gently pressing the mini eggs into the tops of the dough.
Let cool completely before slicing into bars.
