Vanilla Pudding Snickerdoodles
Traditional Snickerdoodles are given an easy and delicious twist with the addition of vanilla pudding.

Preheat your oven to 350 degrees. Line your cookie sheet with parchment paper and set aside.
In a large bowl of your stand mixer, cream the butter, shortening, 1/2 cup sugar, and powdered sugar until light and fluffy. Beat in the egg, vanilla, and dry pudding mix.
In a seperate bowl, combine the flour, cream of tartar, and baking soda; gradually add the dry ingredients to the creamed mixture and beat until just combined.
In a small bowl, combine the remaining 1/4 cup of sugar and the cinnamon.
Roll the dough into 1/2 tablespoon sized balls. Toss the balls into the cinnamon sugar mixture until well coated and then place the dough on the prepared baking sheets, a few inches apart.
Bake for 10 minutes. Remove from the oven and let cool completely on a wire rack.
