In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the garlic and saute for about 1 minute or until fragrant. Add the spinach & cook about 2 minutes or until wilted. Remove from the heat.
Add the chickpeas along with the reserved liquid to the skillet. Toss lightly just to combine.
Add the contents of the skillet to a food processor. Cover & process until smooth, adding olive oil as needed to reach desired consistency.
