Candied Bacon:
Preheat oven to 350 degrees
Place bacon in a single layer on a foiled lined sheet
Sprinkle brown sugar on top of bacon strips
Bake for 10 minutes and then turn strips over and continue to bake for another 8-10 minutes
Cool on a wire rack and then chop finely
Reduce oven to 325 degrees
In a bowl mix flour and baking soda
In a medium bowl cream together butter and sugars
Add vanilla, egg + egg yolk to the bowl and beat until creamy
Add flour mixture and mix well
Add candied bacon and chocolate chips until combined
Bake on a parchment lined baking sheet for 12 minutes
Let cool 5 minutes before placing on wire rack
