Welcome to week #3 of Mom’s Test Meal Mondays y’all!!  I’m so excited to have y’all joining me in the kitchen again!  We had some amazing chicken recipes shared last week and even ended up with a tie for our top feature!  If you missed the features, you really should go check them out!!

Now I don’t know about your kiddos, but here in our neck of the woods, school is starting back up!  I can’t believe summer is already over!  So this week for MTM Mondays we are going to focus on all things kid approved, especially those after school snacks.  Give us all some good inspiration heading into the new school year!

So to get us started, I’m going to hand my kitchen over to my wonderful co-host & friend (who just so happens to have a pretty awesome name if I do say so myself) Jamie from Love Bakes Good Cakes.

First, I want to thank Jaime Lyn from Mom’s Test Kitchen for having me! This is my first guest post – and I was assured that I wouldn’t mess it up! I’m even going to go as far as promising that I’ll share links on topic this time! 😉 Hehe. (I mistakenly linked a non-chicken dish last week before realizing my error … Ooops!) Normally, I blog at my lil neck of the web called Love Bakes Good Cakes … and it’s not just about cakes! 

This week’s theme at Mom’s Test Meal Mondays is “after school snacks”. We home school, but after school snacks are still a part of our day! I like to serve my kids treats that are quick – and usually stuff they can prepare themselves. I don’t know about your family, but our family loves pizza. We eat pizza on occasion for lunch or snacks and every Friday night! Today, I’m going to share a super easy Tortilla Pizza recipe. It’s not a new recipe, but maybe something you’ve forgotten about. Feel free to play around with the ingredients – use pesto, salsa, BBQ sauce or Alfredo sauce in place of the pizza sauce. Use whatever meats and veggies your family prefers! Go crazy … or keep it simple. The choice is yours! 🙂 My favorite Tortilla Pizza is pesto with sliced black olives, diced tomatoes, chopped spinach and crumbled feta cheese. My boys prefer plain ol’ pepperoni and cheese!

Tortilla Pizza
Printable recipe
Yield: 1 serving
1 small whole-wheat tortilla
¼ cup pizza sauce
¼-⅓ cup shredded cheese
toppings of choice

Preheat oven to 425° F. Place tortilla on an ungreased baking sheet. Top with pizza sauce, then cheese. Add whatever topping you prefer. Place in oven and bake for 12-15 minutes or until tortilla is golden and cheese is bubbly. Slice and eat!
