Maple Chicken & Waffle Mini Burgers #WaffleWednesdays

Welcome to #WaffleWednesdays y’all!!  I have partnered with Kellogg’s to be a Chief Waffle Officer which means I will be sharing Eggo waffle recipes here every Wednesday until the end of October!!  But don’t expect eight weeks of boring, waffle-filled breakfasts!  We’re thinking outside of the box & cooking up your favorite desserts, game day snacks & holiday treats all using waffles!!

When you think football food, whether it be tailgating or fixing snacks for a party at your house, what’s the first thing that comes to mind?  Burgers right??  Everyone wants a nice grilled juicy burger while they are watching football.  The two just go together.

So today for our football snacks #WaffleWednesday, I made a fun play on the yummy chicken & waffles dinner & made y’all some Maple Chicken & Waffle Mini Burgers!  And they were the perfect football food!  The Hubs ate the whole plate full Sunday while we were watching the Cowboys whoop up on the Rams!!

MAPLE CHICKEN & WAFFLE MINI BURGERS 
YIELD: serves 3-4

INGREDIENTS:

  • 1 pound ground chicken
  • 1 – 2 tablespoons maple syrup
  • salt & pepper to season
  • 1 tablespoon canola oil
  • 1 box Eggo Minis Homestyle Waffles {you probably won’t need quite the whole box}
  • butter
  • favorite burger fixings {lettuce, tomato, onions, etc}

COOKING DIRECTIONS:

  1. Mix together the ground chicken & maple syrup {use as much or as little based on your taste preference}. Season the meat with salt & pepper. Shape the chicken into tablespoon size balls.
  2. Heat the canola oil in a large skillet over medium heat. Using your hands, flatten the balls into patties & then place in the skillet. Cook until slightly brown on one side and then flip & cook the other side until cooked through & no longer pink, about 5 minutes per side. Repeat for each patty. Alternately, you can grill the chicken over medium heat for about 5 minutes per side or until preferred doneness.
  3. Thaw 2 Eggo Minis Waffles per chicken patty ~ I had 14 patties. Lightly butter one side of each waffle and then toast in a small skillet until just golden.
  4. To assemble: Place one cooked chicken patty on top of one Eggo Minis Waffle. Top the chicken with your favorite burger fixings. Top the burger with a second Eggo Minis Waffle.
