APPLE BUTTER INFO

The key ingredient for these mouthwatering cinnamon apple butter pancakes is the apple butter. Are you unfamiliar with apple butter? Apple butter is essentially a highly concentrated form of applesauce, and there is no butter in it at all.

To make apple butter you cook down apples with spices or cider until all the sugars are caramelized and you are left with a rich brown highly concentrated apple flavor. You can make your own, or you can purchase from local farms (especially during the fall), or at the grocery store. I typically always have a store-bought jar in my fridge. Apple Butter is a family favorite for adding to biscuits.

HOW TO MAKE THE PANCAKES

This recipe for apple butter pancakes only takes a few minutes to make, so you could even make them on a weekday if you wanted to. Simply combine your Bisquick, eggs, vegetable oil, and milk in a bowl. Now add your apple butter and cinnamon and stir. Be careful not to overmix your batter!

Heat your skillet or griddle on the stove on medium-high heat. Once it is hot scoop your apple cinnamon pancake batter into the skillet ¼ cup at a time. Let each pancake cook until the edges are dry, and then flip them over to cook the other side. Spread the top of the pancakes with butter or margarine, or even more apple butter if you like, and serve while they are still hot. Take it up a notch further by topping it with Fried Apples.

FREEZER FRIENDLY

These apple butter pancakes are going to become a staple family recipe, and you can even teach the kids how to help you make them. No time to make these pancakes during the busy work and school week, but really love them? No problem, because these pancakes are freezer friendly

Simply mix up an extra batch (or two) and cook as usual. Once they are cooked, cool them down completely. Once they have cooled, place them in a gallon-size Ziploc bag with a piece of parchment paper in between each pancake. This will prevent the pancakes from sticking together. When you are ready to eat the frozen pancakes simply pull them out and heat them in the toaster. You could also keep a batch in the refrigerator for three to four days in an airtight container. They probably won’t last that long though!
